Niigata (The Clean & Dry): Known for tanrei karakuchi (light and dry) sake. Because the water is soft and the winters are snowy, the sake is crisp, refreshing, and incredibly smooth. Look for this if you want something that cleanses the palate.


Nada/Hyogo (The Bold & Rich): Often called the “Masculine” style. This region uses hard water rich in minerals, which creates bold, dry, and full-bodied sake. These are the workhorses of the industry—perfect with savory izakaya food.


Kyoto/Fushimi (The Elegant & Balanced): Famous for using “smooth” water. These sakes are often more fragrant and feminine in profile, with a soft, rounded mouthfeel that feels luxurious and delicate.

Know your Teishoku.

Teishoku, the classic Japanese set meal, originated in Zen temples, where one main, one side existed in balance, seasonally, and provided core nutrition for both lunch and dinner. Now it´s a family restaurant staple and a concept you can use lightly to eat fully and healthily, or get deep into, with a dizzying array of fish and side combos from everyone´s favorite mains: salted mackerel to fried chicken.

Asahi is most famous for Asahi Super Dry, a crisp, light, and “dry” lager known for its clean finish.
